Ahhhh, the sweet sound of rain

I have always loved the rain....especially if I can stay home under a blanket and just enjoy it. Add a great book and a hot cup of coffee and that is bonus. Maybe even pjs and slippers? scrapbooking? You get the drift. Right now, dinner is rolling; a crackling fire is burning; music is on; and I am uploading pics. While it rains, rains, rains. Ahhh!

Since I am uploading recent pics I thought I would share a few:
Mag got a medal for her UIL solo

Sean turned 14

my god-daughter is getting married at the end of April; her New Orleans bridal shower was last week (her fiance, Mike, is from Chalmette - they met in Witchita, crazy, huh?)

the French Quarter on a beautiful 'spring' day
(this guy was right outside the Cathedral and he was mesmerizing)

There were many days were I stepped off the school bus into a torrential downpour and there was nothing more awesome than heading home to warm clothes and the sound of thunder rolling outside. I am hoping Sean and his friends who are out playing football in this downpour are creating fond memories. A warm dinner will hopefully add to his day. Fritz, however, is not fond of the rain or thunder and needs a Thundershirt.

Good-bye 2013!

2013 has been quite the whirlwind for us overall. I thought I would take some time and make a video montage of our year. I am happy to report that I accomplished TWO of my New Year's resolutions from January.....I did take a photo a day (sometimes capturing the mundane things like dirty dishes but I did it) AND I managed to blog more than I have in almost four years. I will admit to shedding a few tears while I created, edited, rearranged, and added pics to this year in review. Tears of joy shed that remind me how blessed we are with great friends and family whether near or far. Tears of happiness for fond memories traveling many, many miles (and blocking out the random meltdowns after many, many hours of road-tripping).
Our Year in Review (via One True Media)

Looking forward to more travel and memory making in 2014.....hoping to add Mardi Gras and Virginia to our lists along with visiting family in Georgia and an extended CA visit (maybe) in the summer. My new camera is ready for lots of use; I hope to share more our craziness with you in 2014.

Food for thought

It's no secret that I think about food a lot --- I like to cook; I meal plan; I pack my kids lunches daily; I pack a snack cooler for my husband; I try to bring snacks if I have a drive between work locations so I don't get tempted by fastfood; I love coupons; I LIKE TO EAT; I have a sweet tooth.

But, the other day, I was eating some sautéed eggplant with dinner and my brain immediately jumped into MEMORY mode. You know the kind of memory I'm talking about. The one that comes from deep within your soul and brings you back to another place in time. I started talking about how sautéed eggplant brings me back to my Granny Frances's house in Big Spring, TX; I only visited there during my childhood but I can remember her kitchen and her sautéed eggplant; and how I loved it so much. I guess I will carry a little piece of my Granny with me always.

And what is even more bizarre is the food memories that are BAD!!! Here are a few of mine:
1) spaghetti O's -- NOOO....didn't really ever like them but ate some; woke up puking in my sleep; to this day I can't even stand the smell of them. shudder.
2) watermelon -- I'm sure it was a super fun 4th of July. I remember running all over the neighborhood and eating loads of watermelon and Fruit Stripe gum. I swallowed all of the gum. When my body revolved that night and I woke up sick, I was ruined for life. To this day, I am a 'watermelon snob.' If it is remotely mealy and not sweet, I won't touch it. I always make my kids taste it before I will try it.
3) Orange Soda -- four traditional glucose preganancy tests were bad enough but then I had a 3hr. glucose test. UGH. Only on a rare occasion would I have wanted an orange soda; now I will never drink one ever again. Monster-type drinks are in this category too. I tried a sip once at the beach and I almost threw up right there.
4) and maybe the grossiest of all --- BAD milk. Too many bad milk cartons from random school lunches over the years I guess. I will sniff any and all milk before I attempt a sip. Scarred for life by milk.

Let's switch bad to the GOOD stuff before I ruin my/your day:
1) Roman Meal bread - my Grandma Parks always had it in her little house. And I was always intrigued by the orange bag and begged for a piece of her special bread. Simply delicious.
2) And popcorn balls -- this memory is close to 40yrs. old but I can remember my Grandma and Grandpa (he died when I was 4)  making popcorn balls in their kitchen. How incredibly sweet and delicious they were. And then someone in our neighbor gave homemade ones out on Halloween - the smell wafted for hours on end while they made batch after batch. Kettle corn ain't got nothing on my grandparents :)
3) coconut custard pie --another Texas specialty by my Aunt Mac -- Christmas meant Aunt Mac's pies! And chocolate silk and lemon meringue and pecan. Oh my sweet tooth. A special Christmas memory that seemed so routine at the time but means so much now.
4) Toast with butter and grape jelly --Camp Abbey summer camp. Not necessarily warm either. So yummy (out of the stainless steel bins) especially since some of the food was strange (like powdered milk).
5) Ice Cream Man - Drumstick was the ONLY choice on the rare occasion that my Mom let us get it.
and
6) Cherries and Creole Tomatoes - not eaten together but when purchased from the road-side stand in Raceland, LA they were heaven on earth.

I'm hoping that my children are already developing some random good food memories. Maybe corn casserole on Thanksgiving; Dad's bbq'd ribs and the smell of the smoker; and maybe even Mom's chicken salad on the beach (let's hope that's not a bad memory because of any random sand that got mixed in). And Coney Island hot dogs when we visit Mansfield, OH when visiting Grandma Hall.

Now that I'm hungry for creole tomatoes I guess I'll venture out to see if I can find some.

Calm before the storm

The storm, for our family, represents FOOTBALL season! And it's not a bad storm like Hurricane Katrina. It's like a storm on dry farmlands after a drought; it's exciting, refreshing, and often leaves you with the feeling that 'this won't last long/ it will be gone too soon.' Football season can't come soon enough.

Next week Ian starts practice and Sean picks up his gear. They have been doing small drills in the backyard daily trying to adjust to the heat. Maggie's 'football season' has begun since she is in her 2nd week of band camp. She is working hard and looking forward to being a part of the high school football experience. (We hear it's serious business here in TX)

And, it's not just football within our family, it's SAINTS football and LSU football and fantasy football.
At least four days a week, we will be focused on football - Sean during the week/ Friday Night Lights with Maggie/ Saturday is Ian and LSU/ Sunday is NFL Sunday Ticket! So I think we qualify as a football family. (Amanda gets to be a super fan with me; hoping to teach her a few skills with the camera if she doesn't find some team siblings to hang with)

The madness of school starts on the 25th combined with football. I think that will kick it up a notch to pure chaos but for today we will savor our Blue Bell icecream (we are on our 9th day in a row over 100*), daily trips to the pool, and the slow pace that summer brings.

However, Saints preseason starts tonight so maybe I'll break out the black & gold a little early!

mmmm, can you smell it?

Nope --- not the manicotti in the oven. Or the coffee in my cup. And I wish it was cookies baking in the oven. Instead, it is the GLORIOUS smell of fresh school supplies. Is there anything more exciting than opening and organizing new school supplies. For as long as I can remember I have loved school supplies and the anticipation of getting new ones for a new school year sends adrenaline rushing through my veins. (and really makes me miss my old job, wah!)

Back in the day (going WAY BACK), my Mom used to pre-order our supply bundles and we would head to Fasullo's local drug store/pharmacy to pick it up a few days before school. I would rip that bundle apart as fast as I could to write my name on the fresh, clean goodness of notebooks, folders, and crayons. Oh yes, you know there is NOTHING quite like the clean aroma of a new box crayons.
Crayons, colors, 'crowns', however you say....they smell good!
Over a matter of days, I would organize, re-organize, pack and unpack my backpack in with pure delight.

When we lived in California, it seemed like school had just ended when Target put out the massive quanities of supplies. And then put them on sale. I was literally scooping up supplies within a month of school letting out. So, I had to keep the supplies hidden for about seven weeks before the kids could enjoy the adrenaline rush. Let's face it, there would NOT be any adrenaline if they had to even think about supplies at that point anyway. I hid them because I didn't even want to think about school either.

So today, I ventured out WITH a list and much to my dismay not one box of crayons was on the list! (Ian is getting a supply pack like I used to so I was only shopping for three.)  Not that we need any because we have plenty, but really? Nine binders, loads of dividers, and several composition books later my fingers were itching for something Crayola. I did wind up with two pack of colored pencils because we can never have enough of those but the list was void of Crayola requests. Gone are the days of crayons, markers, colored pencils by the basket full. Now it is mostly reams of college ruled paper along with notebooks, binders, and a couple folders. Binders are $$$$ and I am sad to know they won't likely last the year. We got a few other key things like pencils, pens, highlighters, and erasers, but it's not the same.

Maggie, Sean, and Amanda quickly organized and labeled their stuff but they are not quite ready to head back to the classroom just yet.

I will hold out hope that Ian will have some crayons in his supply pack. He will have the opportunity to rip it open, organize it, label it, and enjoy the scent of the fresh box of crayons. And if he doesn't, I might just have to buy a new box for .25 on sale and hid it in a Ziploc to savor the scent a little longer. (and be super sad that they don't need them in 4th grade)

My babies are getting older and their supplies are evolving as well, it doesn't mean I can't relive my childhood a little.

TX Camping -the New Braunfels edition

Or maybe I should call it 'the camping trip that almost wasn't.'

Last Friday, we packed up the trusty Suburban and headed south five hours to New Braunfels. First stop Mountain Breeze Campground....."um, no -we don't have a reservation; the guy on the phone told us "first come, first served." And you don't take dogs???? There is a dog on your LOGO!" Oh crap. Things got tense as we discovered that dogs aren't allowed as a general rule. (GAH.....we have no problem boarding him or getting a dog sitter had we known.) So we decided that we would check every single area as we drove back toward town with a hotel stay as a last resort.

Rocky Beach had a spot! (time noted: 6pm) They made it clear that about 1000 people would be loading into the river steps from our spot but we were low on options so we simply said yes. Employees strolled by and saw the dog and the first thing we unloaded and tied up was Fritz. We didn't hide him. We unloaded everything in the HOT buggy camping spot and started assembling tents. THEN, the lady comes over and says "oh, you have a dog? we don't allow dogs. You have to leave; we will give you a refund." Did you feel the earth stop spinning????????? Collin had to turn around and decompress before he went postal; I stood there frozen with the tent poles; the kids were SILENT; somewhere an explosion happened because somehow we handled it calmly and simply started tossing things back in the Suburban as Collin started tying gear back onto the luggage rack. What a blessing in disguise.

Two miles down we stopped at a Mom&Pop campground that had a dog sitting out on the grass. So we were hopeful. Collin went in to ask about sites available and quickly came out to converse with a guy on the porch. I could read the man's lips...."let me see him." He wanted to meet Fritz. Before he even got to pet him, the guy saw Fritz's sweet face and how anxious Fritz was to give him some luvin' and he said "come on in." We set up camp 50yds. from the general store, Koozies bar with bands each night, beach volleyball, and horseshoes. We were able to rent our toobs (spelled correctly) from them and they shuttled us up to the drop off. The friendly couple had just bought it a year ago; re-did the camp sites and upgraded the grounds. They were the nicest people and the staff was super friendly too. So, by 8:30pm, we were set to chill. At a site that was a lot cooler and LESS buggy than Rocky Beach. With fireflies = awesome.

We did away with cell phones and time. Who knew what time it was? We enjoyed hot dogs, smores, eggs, sausage, toast, burgers, and more smores. ('the evolution of the toasting marshmallows' post coming soon). We went through a jar of peanut butter in less than 24hrs. And it was all good. Warm, but good. As rustic as I get - insert porta-potties and no showers. Immaculate porta-potties with sanitizer so it wasn't terrible. And at least we had the river for tubing; it's sorta like a shower, right? Brushing your teeth using a cup of water, no problem.

Tubing was fine. The water was cold yet refreshing and I managed to carry my camera double-bagged in a Ziploc and grocery bag so I was able to get some nice pictures. The scenery was beautiful. I got stuck on rocks a bunch and the crowd was younger than we had hoped (smoking, bad language, ridiculous music) but we took it in stride and had fun.

Amanda's quote of the weekend was "I need band-aids, aloe, and OFF." And that about sums it up. Camping in Texas does involve wearing OFF but I won't complain because anytime I wake myself up snoring in a hammock it is a good day!

Ol' River Hideaway will see us again :)

(.....will post pics soon......having issues with uploading from the camera/ desktop is in the shop)

Meals a plenty

Haven't done this since March.....feels so good to not have to think about this for another month. I highly recommend pre-planning; it will save on your grocery bill, it will help you look at what you are eating, and it will save on the daily anxiety of 'what's for dinner'. Feel free to share some ideas and snag some from my list too.

June 2013 -
2 - crawfish etoufee, salad
3 - tuna melts, honeydew
4 - chicken enchiladas, homemade Mexican rice
5 - tortilla crusted tilapia (from Costco), stmd. carrots, salad
6 - homemade chicken pot pie, strawberries & melon
7 - take n' bake pizza, salad (of course, it's the last day of school!)
8 - garlicky shrimp, stmd. broccoli, ranch red potatoes
9 - bbq chicken, black-eye peas, stmd. artichokes
10 - red beans & rice, salad
11 - crockpot roast over creamy polenta (carrots, green beans with roast)
12 - meatloaf, baked mac n' cheese, green beans
13 - hot dogs, homemade greek pasta salad
14 - chicken stir fry, homemade fried rice
15 - Chip-'Hall'-tole (carne asada burritos with fresh guacamole, cilantro rice)
16 - parmesan-lemon mahi mahi, sautéed green beans, garlic mash. potatoes
17 - shake n' bake pork chops, risotto, peas
18 - lasagna, Caesar salad
19 - sloppy joes, stmd. carrots, watermelon
20 - chicken tacos with corn/bean salsa, fresh berries
21 - chef salad, fruit salad
22 - chili, cornbread
23 - grilled tri-tip, baked sweet potato, green beans

28 - grilled salmon, stmd. broccoli, quinoa
29 - chicken parmesan, salad, garlic bread

Now I just need to get the ingredients to get us through the 15th. Although, thinking about shopping and how much food my kids will be eating once school is out on Friday scares me to death. The burpees challenge that I committed to for June scares me too. But, onward to healthier living and hopefully a better appearance in a bathing suit.

Take me home

Sunbeam bread got me thinking about my home, Louisiana. Here are a few things that cross my mind when it comes to Louisiana....
1) A snoball is NOT a snow-cone. Nor is it shaved ice. It has a texture all it's own and is not easily duplicated. Everyone has their favorite flavor or combination. I'm looking forward to my next chance at a spearmint or strawberry personally.
2) The Holy Trinity is sacred in Louisiana. Many people are strong in their faith. BUT there is more than one holy trinity and the second involves onion, bell pepper, and celery. Don't believe me? Watch a Southern cooking show or ask someone about Cajun cooking.
3) The delicious red crustaceans that people enjoy by the pound are CRAWfish not crayfish. And they are best served spicy with mini red potatoes and corn-on-the-cob (served on newspaper is best).
4) Red beans are not from a can. They come dry in a bag labeled Camellia :)
5) Sweet tea is serious business.

and last but not least
6) Blue Bell ice cream is THE BEST. (My kids go through a gallons of ice cream quite easily)

Texas has brought us a LOT closer to all of these things considering I can get all of them here except the snoball. And that makes going home this weekend even more exciting. A long road trip topped off with great food, great friends, and specialty foods that speak to your soul. Yeah you right!

Monday Morning Musings

Not sure I'll get to this every Monday morning, but ideally I'll stop and take the time to jot down some things that I'm thankful for, commitments of the week, maybe some recipes, and whatever my brain dumps out.
Today I am thankful for:
-free coffee Monday at Dunkin Donuts (and I didn't even know about it!). I got free coffee in a travel mug no less. That's like winning the lottery for me :)
-warm spring breezes
-Direct TV installation (if they would just get here already!) Need to program Deadliest Catch.....new season starts tomorrow.
-time to sit and a read a few blogs and laugh at the world. If you don't mind a little bad language, you must check out http://www.peopleiwanttopunchinthethroat.com/ and laugh with me
-strangers that are willing to extend a hand to someone totally new and they help you move in AND bring you food.
-a working washer and dryer
-school busses
-a Sprout's within minutes of my house

Anyone have any favorite spring recipes that are relatively healthy? I need to meal plan for the 2nd half of the month and I would love some new ideas. I can't figure out Pinterest to save my life and it leaves me feeling inadequate anyway. Guess I am not an overachiever.

I need to read Catching Fire before the movie comes out. I enjoyed Hunger Games but am dragging my feet on this one. The movie trailer was intriguing so I guess I'll get sucked into the madness.

Still on the to-do list - exercise. Gonna have to 'schedule' it because I am not self-motivated. It's on the list with a sports physical for Sean, IEP update mtg. for Amanda, DMV trip for car reg., camera repairs, unpacking, and grocery shopping.

Enough computer time for this Monday, bed to be made and boxes remain......

Happy New Year!

2013.....where do I begin?
I guess I'll just jump back in to my blog and hope for the best. 18 posts in 2012, sad and pathetic. I love writing and journaling so I'm going to strive to blog more in 2013 even if I'm the only one who reads. My goals (not really resolutions) for 2013 are to take a picture a day and fill digital pages (with the help of Creative Memories!) weekly as an easy way to see how life goes, progresses, and changes over a year; get back to meal planning; and better overall healthy living including more exercise, less TV, and more sleep.

So far, I've done great with the picture a day (woot, four days, yeah!) and getting more sleep. Sleeping in helps but reality starts next week. My great start is with the meal planning......January is done. Seems like an easier goal if I only have to think about it 12 times a year, right? Here is the plan for January:

5th - chicken parmesan served with pasta, spinach salad
6th - prime rib soup with crusty rolls, tomato/mozz/pests salad
7th - red beans and rice w/smoked sausage, salad, french bread
8th - venison/beef chili, salad, corn bread
9th - ham (Christmas from freezer) with creamy mac n'cheese & peas, pan saute eggplant
10th - sloppy joes, steamed veggies
11th - ***Mom's workshop*** (out with Dad)
12th - chef salad (ham, turkey, hb eggs, cucum., grn.pepp, tomatoes, cheese, celery, bacon bits)
13th - bbq deer leg, grilled asparagus, mashed potatoes
14th - Grandma Noodles -fettucine alfredo with chicken, steamed broccoli
15th - smothered pork chops with brown wild rice blend, creamed corn
16th - chicken cordon bleu with ranch potatoes, salad
17th - leftovers, clear out fridge
18th - meatloaf (turkey/beef/venison), creamy polenta, soy beans
19th - garlicky shrimp scampi, grits, baked eggplant
20th - steak, green beans, risotto
21st - spaghetti with meatballs, salad, garlic bread
22nd - chicken pot pie, fresh cut fruit
23rd - macadamia nut chicken, green beans, pine nut couscous
24th - tilapia piccata, steamed carrots, roasted red pot.
25th - tuna patties, green beans, homemade pasta salad
26th - bbq chicken, coleslaw, baked beans
27th - shepherds pie, crusty bread, fruit?
28th - meditteranean stuffed peppers, fresh fruit
29th - chicken enchiladas, spanish rice
30th - skillet stroganoff, steamed broccoli
31st - baked potato soup, crusty bread, salad

Phew......and what makes me happiest is it's all from scratch except for the sloppy joes. I don't make that sauce. I've come A LONG way and evolved from Rice-a-roni to my own homemade rice; I'm even going to attempt to duplicate Grandma Hall's alfredo sauce. It might not be super creative or even Pinterest worthy but my kids eat it and we aren't eating out. And, best of all, it answers the nagging question (that the kids ask a million times each)....What's for dinner?

I just smile, nod, and tell them to check the list :)
Now to make my grocery list and grab my coupons......

Just one of those days

Have you ever had a day where MOST everything just goes well? I don't have them very often; well, I can't even remember the last time MOST everything went so smoothly. Ya know, minimal bickering; transitions go smoothly; dinner is pre-planned; everyone seems happy in the moment. I'm happy to say today was one of those days.

With plans to hit the beach, I got up before the kids (see, I said not very often!). I prepped the roast for the crockpot, got some coffee and breakfast, and made beach food. We made it to the beach, found a good parking spot immediately, and managed to hit the sand without incident. Woot! We met up with friends and the kids scattered like cockroaches while I rummaged for sunscreen, my hat and my beachchair.

Ian is the sand-crab digger. He will spend hours hoping to find the biggest one on the planet.
And then keep digging for yet an even bigger one. He did eventually venture out into the crazy waves but went right back to being the professional sand-crab finder (and creeping me out with them).

The waves were insane. They were the biggest I can ever remember seeing. Sean was even wary for a short while saying "too big, too powerful." However, having a great friend by your side makes everything easier.

That's Jake and Sean on the bottom right, cracking up. They are 17 days apart in age; they met just before their 2nd birthday. Even though we don't see Jake and his fantastic family much the kids get along splendidly. They just 'get' each other. (can you see the wave crashing in the background!)

It was even cooler to watch bunches of the kids in our group venture out together. They would find a comfort zone in the rolling waves and all jump in together.

Left to right.....Ben (9), Amanda (10), Jake(12), Sean (12), Marin (almost 11)
And, believe it or not, I even got in the water......to take pictures. Here is my favorite of Amanda.
I really need to get my zoom lense fixed b/c the Pacific Ocean is COLD!
I don't think Jake came out for more than five minutes the entire time we were there. Since I was 'used' to the water at this point, I decided to venture in myself. I RARELY go near the toe-cramping salt water and the kids were shocked when I grabbed a board and joined in. Thanks to Nicole, there is proof of my insanity.
And, sweet Grace filled her day with sand play and lot of wave jumping.

That makes any day PERFECT in her eyes :)

Everyone made it safely through the day without a scratch except for the random bee sting that Ben ended up with. As if that wasn't a good enough day......add in ice cream on the way home and the knowledge that my crockpot was cooking, it was all good. To top off the day, Amanda had her first
tae-kwon-do belt testing. She held her head high (she doesn't do that often), displayed good posture, and did really well.

Through her rosey sunburnt cheeks (yes, she wore sunscreen and we re-applied), she was still able to flash me a proud smile. She should be proud! Such a fighter.

But wait, there's more.........we hit the pool for a while while our potatoes roasted because one can never have enough sunshine and water play. We had a yummy dinner and then it was time to do the kid switch and bring Jake to his family where I would also retrieve Maggie.  We met half-way in a Denny's parking lot (cue a country song, oh, nevermind) and like friends do the adults began to chat while the kids rocked out to blaring music/ car doors open/ windows down. All. the. while. my. batttttteeeerrryyyyy drained. Gah!

And that's the kicker. That is why it is a MOSTLY smooth day. Even better with the fact that Chad had jumper cables and I didn't have to wait for AAA in a random parking lot with four kids at 10pm. See, smooth :)

With summer days dwindling away, I will gladly take a few more of these MOSTLY smooth ones. (minus the bee sting and sunburn of course).

A LOVE Thursday post (a few minutes early)
Ten Thirteen days ago when I posted about Christmas pictures it wasn't my intention to disappear again. Life is busy as usual, but you add in the insanity of shopping, stealth gift wrapping, end of semester school projects and a couple of holiday concerts in there and you get MADNESS. But I'm not complaining, really, for once I'm not! Because it also means Christmas goodies........ Last night started it - homemade fudge. And then today it was two kinds of Chex Mix, chocolate chip cookies, peanut butter blossom cookies, and cornflake candy. Another batch of fudge was on the agenda until I realized I was out of baking chocolate. I'm also planning to make some golden cheesecake bars for a gathering with friends on Sat. night. What is your favorite holiday cookie/treat/specialty? I'm always up for making something new.

The kids are treasuring every morsel of their Advent calendars from Trader Joe's. Who doesn't like to start their day with a bit of chocolate? They are keeping a close inventory of my late night wrapping sessions and can quickly tell me if something has been added under the tree and which family member it's for. In some ways it sucks the fun out of it when they make the tree all messy and desheveled and then argue about what was added? and why does he/she have more than I do? nonsense. I know they are 'just being kids' but for all the goodness in the world make them stop arguing about. Next year I am using a mystery number system that only I will know about. They might mess up the pretty presents but I will still hold the cards. Muhahahaha.

We've watched Rudolph (my childhood favorite!) and several versions of A Christmas Carol so far but have yet to see National Lampoon's Christmas Vacation. I can't believe it's taken this long but it WILL happen. And no Christmas would be complete without It's A Wonderful Life on Christmas Eve.

Merry Christmas everyone.......

Thanksgiving Morning Musings.......
I LOVE Thanksgiving.......the cooking and preparation, the scents around all the comfort food, the Macy's Thanksgiving Day parade, football on the television, the crafts the kids make to decorate the table, the crisp weather and most of all the gathering of family and friends taking time away from the craziness of life to remember how blessed and thankful we are. It's probably my favorite holiday.

Yesterday day I made the cranberry relish, the pecan pie, and Grandma Hall 5-cup salad (but it's 10-cup for us b/c the kids LOVE it). Ian cut all of the celery for the stuffing and assembled it with Collin last night. This morning I'm prepping the green bean casserole, baked corn, sweet potatoes, mashed potatoes, and baking a pumpkin pie. I am queen of the oven; that's because Collin is frying the turkey this year. With recent oven issues (and not even knowing if we were going to be able to use it) along with its small size, he decided to attempt frying the turkey this year. So, Pepperidge Farm gravy it is. (shhhh, don't tell his mother)

Another part of the day I enjoy is checking out the Black Friday sales. I have a short list of things left to get so I'll see if there are any MUST HAVES that I don't want to miss out on. Midnight is SO MUCH better for me than 5am :) But I refuse to fight with insane people over things like TVs we don't need or the latest Wii game. I don't mind the spot at the far end of the parking lot, the long lines, or the crowds. It's all a mind set......savoring in the holiday sales b/c it's the HOLIDAYS. Merry Christmas, folks. If someone tries to lose their marbles on me, I just smile and nod and wish them a Merry Christmas. It usually shuts them right up! It reminds them of what the season is truly about.

And, last but not least, let the Christmas decorating begin. Clark, aka Collin, usually starts tomorrow. Being in a rental this year, our house is MUCH smaller, but I'm sure he'll do his best to win the neighborhood decorating contest. (He's been trimming the front tree for weeks to make sure the lights will be seen, lol)

And with all the festivities DO NOT think I'm straying from the Game On! challenge. I'm taking ONE meal off today and then going to take Friday or Sat. as my food day-off so I can enjoy leftovers and maybe even some movie popcorn. I think I'll even exercise this evening to make sure I work off those extra carbs. (what is wrong with me?)

Off to cook in my pjs :)
HAPPY THANKSGIVING!

A FRESH START

For me, September and the start of school is much like nesting and preparing for a new child. Here's how the last few days have played out:
1) All the laundry is done and put away. Just like when you have a new baby, you want the gowns, onesies, blankets, and sleepers all ready. We have the hampers empty but baby laundry smells much sweeter.

2) I have meals planned for the next two weeks. Today I'll have all the ingredients and then will happily only need to refill milk, bread, and fresh fruit (and likely school lunch snacks). Prepping for a new baby usually involves double-batching so I can have a freezer stash but this time I won't have people bringing me meals so I'll be happy with meal planning and knowing the answer to the 'what's for dinner?' questions.

3) Fresh school supplies......you know the drill......school requires a lot of supplies like scissors, glue, pencils, paper, backpack and more just like a baby requires LOADS o' stuff (diapers, wipes, bath soap, stroller, etc.). Two things I love the smell of --a fresh box of crayons and a fresh bathed baby.

4) New shoes and clothes........need I say more?

5) Organizing and de-cluttering -- we have been through clothes and have yet another load for Goodwill. Just yesterday I sorted three boxes of random stuff that was tossed in boxes from the move. It parallels to all the things an expectant Mom feels she HAS to get done.

6) And lastly, all the random chores that have been on the list of things to do that I'm getting done knowing that 'going-back-to-work' is staring me in the face........dog grooming (check: Collin did it!), call for bulk trash pickup for old loveseat, and call the insurance company yet again.

Summer has zoomed by; we spent much time at the pool, a few days at the beach, and squeezed in two short weekend adventures. It had it's draggy moments and now the anticipation is building. Here comes 8th, 6th, 4th, and 2nd grades whether we are ready or not.

Even though there isn't a CHANCE ON THIS PLANET that a new baby is gonna join our family, I'll love on the littles that friends have (Laura!) and enjoy my restful uninterrupted sleep.

It's summer so that means my kids have POPSICLES on the brain. Well, not only in summer, but summer makes the thoughts of cool, refreshing snacks explode. We don't have an ice-cream man that drives around and sends them into a frenzy running home for money like I did a million years ago when I was a kid. We just have an occasional Mexican guy pushing a cart with a bell when we are a baseball. (don't shoot me and tell me it's a stereotype; it's NOT; it's a true statement)

So I went in search of some popsicle molds just to try to add to the fun of it all (and maybe save some $$ in the process). I love William Sonoma stuff but can't bring myself to pay through the nose (+ shipping) for these cool molds.
I mean REALLY! They are cool and all that but not THAT cool........close to $25, yikes.

Then I came across theses nifty little ones at CVS in the bargin bin for $2! They've tried orange juice, apple juice, strawberry lemonade, and Coca-cola pops so far. Strawberry lemonade is the definite favorite. Maybe we'll try to make some limeade ones. And if I'm feeling really zany I might even buy some Kool-aid mix for them.

Not exactly the cool firecracker (red-white-blue) ones that I used to get from the ice cream truck, but definitely better than the frozen-Kool-aid-in-a-cup-and-flip-over-method my Mom used.

Want a hit for dinner???? Try this---
Tortilla-crusted tilapia (from Costco; my family eats the WHOLE box)--13min. in oven at 425*; wild-rice blend (from Henry's) boil for about 35-40 until done [while you prep the salsa]; MAKE THIS PINEAPPLE SALSA! (I leave out the chili peppers & I used dried parsley instead of cilantro b/c that's what I had on hand).

Let's put it this way...........I'm lucky I have a little bit of rice and some salsa as leftovers for lunch. Happy bellies all around! Although I can't say FULL bellies b/c Sean is already scrounging for some else to eat; he's almost 11 and is a bottomless pit. Heaven help me!

It's beginning to look a lot like Christmas; a Southern California Christmas --- beautiful clear skies about 65*, just perfect. Yesterday I was a wrapping fool and I managed to wrap w/o anyone sneaking in for a peek. Still have a few left but nothing that is overwhelming. I just wanted to share some pictures of the what it looks like around here........
This is only 1/2 the house but it's a sample of the insanely tall tree that Collin decorates. You can't see the other tree; part of the yard; walkway. The rain has put a damper on him finishing the lights; makes for a grumpy Mr. Griswold.
Grandma Hall's gifts; the kids can hardly keep their hands off even though I told them it was OK to eat the candy canes.
 The stockings are hung..........
 The cookies are made.............
A Christmas with Scrooge has come to an end (our school 'family of friends' minus Skylar)
but there remains more cookies to be made-- Chex Muddy Buddies; Chex Chili/Garlic Mix; and FUDGE!!! Ooooops, almost forgot to make the five cups/ambrosia salad for tomorrow. And coke-jello salad.
We'll head to church for Christmas Eve service; have some yummy homemade carnitas for dinner today and spend the evening playing games and watching 'It's A Wonderful Life'; tomorrow is the main event. Collin's prime rib, yorkshire pudding, garlic mashed potatoes, and more....

The only thing missing is extended family and SNOW.
BUT, in the words of Tiny Tim,
GOD BLESS US, EVERYONE!
Merry Christmas to you all

Aaaahhhhh, SUMMER
What does it mean to you?
For me,
it's days at the beach and never-ending beach towel laundry.
it's beautiful summer fruit ESPECIALLY watermelon.
it's thinking about everything I eat b/c I have to fit into a bathing suit.
it's sleeping in and lazy mornings except for the much anticipated week of VBS.
it's finally de-cluttering random baskets, papers, mail, and such......even though it means passing the Disney videos to the Goodwill box.
it's washing cars in the evening so we can cool off and have water fights.
it's having a crazy expensive electric bill and a constantly running a/c.
it's Angels baseball, the Tour de France, and Irvine Chargers football (eight more days 'til it starts)!

What does summer mean to you...........

GOOD STUFF
On Monday, I went with Ian's class to the local U-Pick strawberry (& produce) farm. To see the pure excitement in the kids' eyes about riding in a school bus, riding in the wagon pulled by a tractor, and picking strawberries just warms my heart so much. They just see the fun in the little things.......somewhere in adulthood this is lost. (probably when the reality of bills and responsibility takes hold, but it's still sad that most people don't appreciate the little things)We were able to taste FRESH organically grown spinach, sugar snap peas, celery, green onion, lettuce, and carrots as the guide told us about different parts of plants; irrigation; etc. I was shocked and amazed with how eagar Ian was to just eat everything (well, most of the kids did actually).
THEN it was time for the main event..............strawberry picking. After being instructed on how to properly pick the berries and that 'the redder, the better' is the way to decide, the kids were off. Eating to their hearts content while they filled their own basket.
I went with the 'one for me, one for you' philosophy on helping the kids. Of course, I didn't have a basket so my one for me simply went into my mouth. Ian was anxious to share his loot & have fresh strawberry/orange/banana smoothies after school.
